2 slices French Meadow Gluten Free Sandwich Bread3 slices roasted eggplant3 slices roasted zucchini3 slices fresh tomato1 Tbsp prepared pesto1 oz fresh mozzarella, sliced
Directions
Toast bread until golden brown.
Layer pesto, eggplant, zucchini, tomato slices and mozzarella aand top with other slice.
