squash casserole

Ingredients
6 c. shredded yellow and zucchini squash1 med. onion chopped or shredded1 cup fiesta blend shredded cheese2 large eggs1/2 c. Panko Italian bread crumbs1/2 stick of salted butter1 Tablespoon salt2 tsp black ground pepper
Directions
Preheat oven to 350. Spray 6X9 pan
shred the squash into large bowl- I used yellow and zucchini.
chop onion small or shred-add to squash.
add egg and cheese. Mix well.
Spread into pan.
Sprinkle with bread crumbs.
Pour melted butter in zig-zag pattern. You can use margarine or low calorie spreads or olive oil.
Cover with foil and bake for one hour.
