Whitefish with Lemon Vinaigrette

Ingredients
2-3 slices bacon8 tablespoons olive oil3 shallots, Thinly sliced1 large head of radicchio coarsley chopped1(15 oz.) can cannellini beans , drained1/3 cup fish or chicken brothsalt & fresh ground pepper6 ( 5 oz) whitefish fillets, such as talapiaflour for dredgingLemon vinaigrette follows:1/4 cup fresh lemon juice1/4 cup lightly packed fresh italian parsley2--3 cloves of garlic2 tsp. lemon zest1/2 tsp. salt1/4 tsp black pepper1/3 cup extra virgin olive oil
Directions
Heat oil in a large skillet add bacon, shallots and saute until tender, about 2 minutes. Add the radicchio and saute until wilted about 5 minutes. Add beans and broth and cook until heated through, about 5 minutes, season to taste with salt & pepper. Heat 3 TBsp. of oil sprinkle fillets with salt & pepper. Dredge in flour, cook in pan until golden brown, spoon radicchio mixture on the plate top with fillets drizzle the vinaigrette over the top.
Lemon Vinaigrette- Blend the lemon juice, parsley, garlic, lemon zest, salt & pepper in a blender. With the machine running gradually blend in the oil. Season to taste with salt & pepper.
