Cyn's Mock Potato Casserole

Ingredients
16 oz bag frozen cauliflower2 T light butter with canola oil (like Land O Lakes brand spreadable)4 oz cream cheese, softened1 lb turkey bacon, cooked until crispy and crumbled8 oz shredded sharp cheddar cheese, divided2 T chopped green onions (or parsley)2 T Water
Directions
Serves 8

Microwave cauliflower with 2 T water for 10-15 minutes until VERY soft, drain, then mash with potato masher.

Blend in butter and cream cheese.

Add the shredded cheese (reserving about 1/2 cup) and remaining ingredients, and stir together.

Put in a casserole dish and top with remaining shredded cheese.

Bake 350 for 20 minutes, until brown and bubbly.

    We really enjoyed this! It did taste like cauliflower though... which is fine b/c we like cauliflower! I don't agree with the description that says you'll never believe it doesn't have potatoes... definitely no potatoes, but still VERY VERY yummy! Will definitely make it again and again! - 8/24/09

    Delicious! I make mashed cauliflower all the time, but this was way better! I substituted diced ham for the bacon and served it as a main dish, and my family loved it! - 3/4/09

    Instead of using frozen cauliflower, I used a head of fresh cauliflower, cut it up into pieces, boiled it, and mashed it. I also used the Morningstar faux bacon. The casserole was delicious. My husband also really enjoyed it! It reheats well too! - 8/21/08

    This was the first time I had cauliflower and it was V ERY GOOD. I have a passion for potatoes, so I could tell the difference between this and potatoes. That's OK. Cauliflower is MUCH better for me. I had to substitute alot because I didn't have everything. I wasn't prepared. Still, GREAT - 1/2/11

    Excellent! I subbed out the turkey bacon for Morningstar faux bacon (to make it vegetarian) and subbed the cream cheese for FF sour cream and it tasted like sour cream and onion potato chips! I would sooooo make this again! A huge hit at our Thanksgiving table! - 11/22/07

    This dish fooled a few at my Christmas dinner - some who say they do not like cauliflower. I make this dish often because it tastes fabulous - just like a twiced-baked potato. I only use 3 slices of the turkey bacon, not the whole pound. I recommend this to everyone - give it a try. - 1/25/11

    This is pretty high calorie for the amount you get, but with that said I have to tell you it is simply DELICIOUS!!! I don't mind the extra calories for one day to indulge in this dish.     There's absolutely NO reason to add 2 T water just to microwave frozen cauliflower to make this dish. Frozen vegetables have more than enough water for microwave cooking. Fresh cauliflower is 75% water -- plenty of water content to microwave/cook the cauliflower. - 11/25/14

    Really tasty! We made this at Thanksgiving this year and everyone loved it! I highly recommend using less bacon, though - I didn't even have a whole pound, and it was too much. Delicious, though! - 11/27/12

    This was a really good recipe! I made it how the recipe appears. Next time I am going to only use a half a lb of the turkey bacon. I also think it may be even better with ham diced up in it like another post recommended. I did use reduced fat cheddar. - 11/18/12

    This is an old recipe, if a person likes cauliflower, don’t be afraid to say this is whipped up cauliflower, for heavens sakes. Admit that vegetables don’t taste very good to many people so they must be doctored up with cheese and bacon. It is the truth. - 11/30/14

    Very good. A big weakness of mine is potatoes, this will for sure make up for that!
