Raw Vegetable "pasta"

Ingredients
2 small zucchini or baby zucchini squash2 small yellow summer squashsalt and pepper to taste1 Tbsp extra virgin olive oil1 Cup cherry or grape tomatoes, halved5 oil-packed sundried tomotoes drained and julianed1/2 shallot, finely chopped1 Tbsp finely chopped basil1 tsp finely chopped oregano
Directions
shave squash and zucchini lengthwise very thinly with vegatable peeler or on mandolin. In large bowl, gently toss together all ingredients. Transfer to a platter and serve immediately.
