Two Large Cucumbers, One Large tomato, One Jar Pickled Beets (about 2 cups) Cottage Cheese (1 1/2 cups)
Slice the cucumbers, then cut each slice into quarters to make it bite size pieces. Dice the tomato. Slice Beets to make them bite size pieces. Combine the cucumbers, tomatoes, beets and 1 1/2 cups of cottage and SERVE!!
