oatmeal pancake with fruit

Ingredients
1/4 c. oatmeal1/4 c. coconut milk1/4 t baking powder1/4 t vanillafresh fruit or berries
Directions
mix all the "1/4" items and let sit for 15 minutes or while
preparing fresh fruit for topping. Spray pan and with fork
press/smush into a thinner cake. Any thickish liquid works
including egg whites. Brown on both sides til crispy.

Serving Size: makes 1 5 inch pancake
