2 cups pasta1 1/2 cups healthy choice pasta sauce add 60 cal per person1/2 cup onion dicedto taste salt free italian sseasoning1/2 tsp garlic powder15 oz boneless skinless cooked chicken breast diced. turkey can be substituded1cup cottage cheese1 cup diced fresh tomatoes1/4 tsp ground nutmeg4 oz grated mozzarella cheese, part skim
Cook noodles according to package directions, drain and rinse with water. saute vegetables in a non-stick frying pan (or spray with pam) with garlic and italian seasoning, adding tomatoes last. In a large bowl mix pasta sauce and vegetables. Stir in drained noodles and chicken. Mix together cottage cheese and nutmeg separately. In baking dish, spoon 1/2 noodle mixture into the bottom. spread cottage cheese on top on noodle mixture. top with the remaining noodle mixture. cover and bake at 350 F for 30 min. Sprinkle mozzarella cheese evenly on top. Remove cover and continue baking for 15 min. until cheese is melted and bubbling and hot
