Quiona Salad

Ingredients
1 cup dry quinoa1 medium red pepper2 green onions 1 english cucumber1/4 cup shredded carrot1 can, drained/rinsed garbanzo beans1 can drained/rinsed olives2 Tbsp italian or champange vinigrettesalad dressing1 cup vegetable broth
Directions
Rinse quinoa and cook according to instructions, add vegetable bullion or replacing some water with broth. Chop veggies. Mix everything together and season to taste with salt and pepper. Chill. Portion out for lunch for the week.
