Ingredients
1 c. cornmeal2 c. light, original soy milk3 tbsp. molasses
Directions
Mix all ingredients in a microwave-safe glass dish. Cook in the microwave for 3 minutes on high power, uncovered. Stir. Cook for 2 more minutes. Let rest, covered, for 2 minutes. The pudding should be thick and creamy. If it gets too thick, stir in 1/4-1/2 cup more milk.
