Chicken Alfredo Pizza on a Whole Wheat Crust

Ingredients
Bread Machine Dough for Crust:1 1/4 cups 80 degree water2 tbsp vegetable oil3.5 cups of Whole Wheat Flour1 tsp Salt2 tsp Bread Machine YeastSeason with Italian Seasoning to tasteLight Alfredo Sauce:1 tbsp Olive Oil3 Cloves of Garlic - Minced2 Cups Lowfat Milk 1%1 Cup Chicken Broth3 tbsp All Purpose Flour1/2 tsp. Salt1/4 tsp black pepper1/2 Cup Shredded Mozzarella CheeseToppings:1 Red Bell Pepper sliced1/2 White Onion Chopped1 Clove Garlic2 Cups of Sliced Mushrooms1 Cup of Tomato Slices2 Cups Spinach Leaves2 Chicken Breasts cut into Strips2.5 Cups of Mozzarella Cheese Shredded
Directions
Bread Machine Dough:
Add all ingredients in order to the bread machine. Start bread machine on dough setting. Mine takes 80 min total.
Once dough is finished, preheat oven to 400 degrees and seperate dough into 2 balls and spread onto cookiesheet or pizza stone. Cook in oven at 400 degrees for 10 min.

While dough is in the bread machine . . .

Light Alfredo Sauce
In a small saucepan, heat oil over medium heat. Add garlic and saute until golden brown.

In a medium saucepan, stir together milk, chicken broth, flour, salt and pepper over low heat until smooth and thick. Stir into garlic. Continue to cook over medium low heat, stirring frequently, until the sauce is thick. if sauce is not thickening enough, add a little more flour. Stir in Mozzarella cheese. Let cool, sauce will thicken more as it cools as well.

Toppings:
Brown chicken slices in a medium saucepan and set aside to cool.
In a large skillet add Red Pepper slices, mushrooms, onion and 1 garlic clove minced. Saute until mushrooms are cooked through and onions are translucent. Set aside to cool.

Once the pizza dough comes out of the oven, spoon half of the alfredo sauce on top of each crust and spread evenly.

Evenly add toppings;
Sliced Tomato
Sauted Peppers, Mushrooms, Onion and Garlic
Chicken Strips
Spinach
And coat generously with mozzarella cheese

Place back into 400 degree oven and bake for 10-15 more min or until cheese starts to brown. Let cool for 5 min before cutting.
