Crispy Chicken Planks

Ingredients
1 lb. chicken breast tenders1 1/4 c. panko bread crumbs1 egg1/4 c. egg substitute1/2 tsp salt1/2 tsp pepper1 tsp each of onion powder, garlic powder2 tsp paprika1 tsp. hot pepper sauce (or to taste)
Directions
Mix the egg, egg substitute and hot pepper sauce in a shallow bowl. Mix the onion & garlic powders, salt, pepper, paprika and panko crumbs in another shallow bowl. Dip the chicken tenders into the egg mixture and let excess drip off. Dredge chicken into panko crumbs to coat, pressing crumbs onto chicken. Spread chicken on a baking sheet sprayed with non stick spray and spray tops of chicken tenders lightly with Pam. Bake at 375* for 25 to 30 minutes. (or until juices run clear).
