Cauliflower Mash

Ingredients
1 lb. cauliflower, chopped.1/2 tsp salt.1/2 tsp onion powder.1/4 cup light sour cream.
Directions
Bring a pot of water to a boil and add the cauliflower. Cover and boil until very tender, then drain all the liquid away in a colander.
Transfer the cauliflower to a blender pitcher, add remaining ingredients, and process. You'll need to stop the blender a few times and stir/push it down to get it all to blend. Once it's all moving, crank the blender to the highest speed to remove and clumps. Makes 2 servings with 120 cal. each.

    Adding the sour cream really makes this creamy, and adds more to the comfort food feel. I found that steaming the cauliflower instead of boiling and then making sure it is well drained (maybe even squeezed a little) makes this a thicker, less watery. - 2/25/17
