Potato Tuna Bake

6 medium potatoes, peeled and thinly sliced3 tbsp butter2 shallots, sliced1 medium onion, chopped3 tbsp flour2 1/4 cup 1% milkpinch each of black pepper and salt1/4 tsp mustard2 cans flake light tuna in water1/2 cup mayonnaise1/2 cup shredded cheddar cheese1/2 tsp paprika
Slice potatoes thinly.
Saute onion and shallots in butter
Stir in flour until smooth
Add milk, salt and pepper
Cook, stirring, until thickened
Add mustard
Place potatoes in 11x7 baking dish and pour mixture over potatoes
Bake, covered, for 45 minutes
Remove from oven, add layer of tuna
Combine mayonnaise and cheese, spread over tuna
Sprinkle with paprika
Return to oven, uncovered, for 10-15 minutes
