Pumpkin Dessert Bread

Ingredients
3 c. all-purpose flour1 tsp. baking soda1 tsp. salt (optional)3 tsp. ground cinnamon2 c. sugar2 c. pumpkin4 eggs, beaten1.25 c. corn oil.5 c. chopped walnuts
Directions
Put dry ingredients in large mixing bowl. Use a spoon to make a deep well in the center. Into the well add all other ingredients. Stir carefully--just enough to dampen all the dry ingredients. Pour into two larger loaf pans, greased. Bake at 350' for 1 hour. Can be stored in refrigerator for a long time. Can be frozen. Good with spiced tea. Good cold or warm.

    This was very good. Husband loved it. I used 1 can of pumpkin and I used 1.25 cups of unsweetened applesauce instead of 1.25 cups oil. I would like to know if the applesauce reduced the calorie total. - 2/1/10
