Serve with orange-basil chicken1 mango, peeled, pitted, and finely diced1 avocado, peeled, pitted, and finely diced2 Tbsp sliced red onion2 Tbsp finely diced red bell pepper2 Tbsp chopped fresh cilantro leaves1 Tbsp finely chopped green onions (green parts)1 Tbsp freshly squeezed lime juice1 plum tomato, finely diced1 serrano chile, seeded and dicedsalt & freshly ground pepper, to taste
Gently mix the mango, avocado, onion, bell pepper, cilantro, scallions, lime juice, tomato, and chile in a mixing bowl. Season with salt and pepper and refrigerate.
