Chicken Goulash

3-4 chicken breasts1cups of peppers1 cup of potato1 cup of celery1 cup of carrot1 cup of onion1 chilli pepper3 garlic gloves1 tbsp paprika1 can of tin tomatoes1 chicken stock cube1 tbsp of olive oilSalt and pepper to taste.
Heat the oil- add the chicken and seal the meat on each side for 2-3 mins- remove from the pan.
add the all the vegetables and spices- and fry until the onions are soft.
Add salt and pepper.
Place the chicken back into the pan and stir.
Add the tomatoes, chicken stock and sugar.
Cook either on the stove top for 1hr 30mins or place in the oven at 180 degrees for 1hr -30mins - 2hrs.
Serve with low fat yoghurt or sour cream- and a chunk of crusty bread if so desired.
