Cracked wheat Sourdough Bread

Ingredients
3/4 cup bulgar wheat1 cup hot water1/4 cup canola oil2 T. molasses2 T. honey1 T. salt3/4 cup nonfat milk1/2 cup flax seed meal1/2 cup raw sunflower seeds2-1/2 cups sourdough starter2 cups whole wheat flour3-1/2 cups bread flour
Directions
Combine bulgar and hot water, add ingredients down to the sunflower seeds. Cool a bit and add sourdough starter. Stir in the wheat flour then the bread flour. Knead 10 min and rise 1-1/2 hours. Knock down and rise another hour. Cut in two pieces and shape into loaves in 5"x9" pans that have been well greased. Rise until the dough reaches the top of the pan. Preheat oven to 375 degrees and bake for 30 minutes. rotate pans after 15 minutes. For a crustier bread spray the loaves occasionally in the oven with cool water. Cool on racks for 10 minutes then turn out onto the racks to cool completely before bagging.
