4 Chicken Cutlet Breasts.5 Cup Flour.5 Cup Egg Substitute1 Cup Italian Bread CrumbsExtra Light Olive OilTomato Sauce.5 Cup Low Fat Mozzarella Shredded Cheese8 slices Italian Bread
Rinse Chicken Cutlets; dip in flour; shake off extra.
Dredge in egg substitute; drain. Dip in breadcrumbs.
Heat oil in lg skillet. Brown cutlets in oil; cover with lid and cook for 20-25 minutes until no longer pink. drain on paper towel. Divide cheese into 4 servings and top each cutlet until melted.
Toast bread. Spread tomato sauce (1 Tbsp or so) onto each slice of bread. Add chicken.
