Chipolte Spinach Bake

Ingredients
4 large eggs 3/4 cup Cottage Cheese 1% Milkfat, Spinach, frozen, thawed and drained1/2 medium Vadalia onion, chopped2 tsp Walden Farms Chipolte Ranch Dressing2 wedges Laughing Cow Light Chipolte Cheese diced1 tbsp garlic powderdash of red pepper flakes1 medium tomato sliced1 tbsp grated parmesan cheesedried parsleycooking spray such as PAM
Directions
Preheat oven to 350 and spray a pie plate with PAM
Thaw and squeeze all liquids from spinach
whisk eggs
Reserve sliced tomato, dried parsly and parmesan cheese for topping
Mix with a fork all other ingredients
spread mixture in pie plate and top with tomato slices
sprinkle with shredded parm cheese and dried parsley
bake 15 - 20 minutes
