Skinny Scallop Scampi

2 tbsp olive oil2 to 3 cloves garlic, peeled and chopped1 pound raw bay scallops1 lemon, juiced1 large bunch flat-leaf parsley, washed,dried, and chopped (3⁄4 cup) or pinch of dried italian spice blend1⁄4 tsp red pepper flakes
1. Place a large sauté pan over moderate heat
and add the oil. Once warm, add the garlic and
sauté until soft, about 1 minute. Do not let it
brown.
2. Add the scallops and sauté until cooked (the
scallops will start turning opaque), 3 to 4 minutes. Stir
in the lemon juice and parsley. Cook just 3 to 4 minutes longer (do not overcook or the scallops
will be tough). Remove from heat and season
with the red pepper flakes.
