Hearty Chicken Tequila Soup (crockpot)

Ingredients
1 cup frozen corn, thawed1 medium onion, chopped2 tablespoons tequila1 can rotel (diced tomatoes and chiles)2 cups chicken broth3-4 chicken breasts2 cloves garlic or equivilent in garlic powder
Directions
Cover bottom of crockpot with onions, rotel, garlic, and corn.

Put chicken on top.

Mix chicken broth and tequila in small bowl.

Pour mixture over chicken.

Cover and cook on low for 8-10 hours

Make 2-4 servings

    I made this also with slight variations. Used 14.5 oz can diced tomatoes with jalapenos bc that's all I had. Also added a little cayenne pepper and 2 T. fresh chopped cilantro. Had good kick to it. My husband also added some whole wheat egg noodles to his and it was good too. - 11/10/09
