Summer squash - one whole slicedOnion- one medium cut into wedgesRed Bell Pepper - cut into chunksAsparagus - tough ends snapped off and broken into 2 inch pieces2-3 cloves of garlic crushedOlive oil and baltsamic vineagarSalt and pepper to tasteCrumbled Feta Cheese
Combine all ingrediants except feta cheese stirring well to coat with oil and vinegar. Place in heated grill pan over hot coals or gas and saute until cooked. Some charring is to be expected and even welcomed. Place in serving bowl and top with feta cheese. Feel free to add or substitute your favorite veggies. I've made with zuchinni, eggplant, cherry tomatos. I usually eyebal the oil and vinegar. Leftovers make a great filling for a veggie omelette or with leftover steak tossed with fettucini.
