1/2 Cup Vegetable Stock1 Medium Red Onion3 Medium Peppers (green, red or yellow...or one of each!)3 Medium Potatos, raw & cut (Yams can be substituted)3/4 Cup Chickpeas1/4 Cup Raisins2 Cups Zucchini, sliced3 Tbs Tomato paste canned, low salt1 tsp Coriander, ground1 tsp Cumin seed, ground1/4 tsp Cayenne pepper1 Medium Garlic clove, crushed1/2 tsp Paprika1/4 Cup White Table or Cooking Wine10 Ounces Couscous, uncooked
Saute onions and peppers in broth. Add remaining ingredients (except couscous) and simmer for 30 minutes.
Meanwhile, prepare couscous according to box instructions.
Let vegetables stand for 10 minutes. Serve over couscous.
