High Protein Steel Cut Oatmeal with 1/2 Grapefruit

3 c. steel cut oats cooked1 tbsp. CinnamonA pinch of fresh orange/grapefruit zest 2 tsp. flaxseed oil (in lieu of butter)4 tbsp. Barlean's Organic Oils Forti-flax2 c. Almond Milk (in lieu of cow's milk)2 egg white or 1/2 c. egg beatersSugar Free Maple Syrup to taste1/2 grapefruit
Cook 1 cup of dried steel cut oats in water for appoximately 30 minutes (until thick). This makes approximately 3 cups of oatmeal. Stir in 2 tbsp of Forti-flax. Place 3/4 cup of the mixture into breakfast bowl and put away the rest for another day. Mix together the egg beater and almonds milk. The yellow coloring of the egg beaters makes it look like buttermilk. Slowly warm mixture over medium heat. Add in the cinnamon, a pinch of grapefruit or orange zest, and flaxseed oil. When mixture is warm and fragrant, slowly mix in with oatmeal until desired consistency (about 1/2 cup). Save the rest in the refrigerator to mix with the oatmeal on another day. MIx in a no-sugar maple syrup to sweeten the oatmeal taste. I use Nature's Hollow Sugar Free Maple Flavored Syrup before eating. Cut a grapefruit in half. Save one half in frig and eat the other.
