Sherried Mushroom Chicken

2 lbs. chicken thighs or tenders½ green pepper1 stalk celery½ onion2 cloves garlic2 Tbsps. Oil2 Tbsps. Butter1 can cream of mushroom soup1 can chicken stock½ cup sherry4 oz. crème fraiche4 oz. sliced mushrooms¼ cup shredded parmesan cheese¼ cup asiago cheese
Saute peppers, celery and onion in olive oil/butter until tender, add mushrooms and brown slightly. Remove from pan. Add more oil, fry chicken tenders quickly until brown. Set chicken in oven proof pan. In fry pan that vegetables and chicken were fried, pour in chicken broth and cream of mushroom soup. Beat with wire whisk until smooth. Heat on moderate heat. Add in sherry and crème fraiche. Heat together, smoothing with whisk. Thicken sauce with flour if necessary. Pour sauce over the chicken, add vegetables that were set aside. Bake in 350 degree oven for 20 – 30 minutes.
