Crispy Tilapia Fish Fillets

Ingredients
1 Tbsp Olive Oil1/4 C Buttermilk1 Egg white1 Tbsp Water1 tsp Dijon Mustard1/2 C Whole Wheat Panko Breadcrumbs1/2 tsp each sea salt & freshly ground black pepper2 x 4-ox tilapia filets (other thin* filets can be used)
Directions
1. Spread oil on a rimmed baking sheet; heat in 450*F oven for five min.

2. Meanwhile, pour buttermilk into a shallow dish. In a second shallow dish whisk toghether egg white, water and mustard. In a third shallow dish, combine breadcurmbs, salt and pepper.Dip fish inot buttermilk, then egg mixture and then into breadcrumb mixture, turning to coat.

3. Place fish on hot baking sheet. Bake, turning once, until golden and fish fakes easily when tested, about 20 min. Serve with Baked Sweet Potato Fries and Dill Yogurt Dip.

**Thicker cuts of fish will not result in crispy texture.
