yummy high fiber veggie soup

Ingredients
-2 Cartons - Campbell's No Salt Added Chicken Broth(this broth is also fat free!)-2 cups chopped cauliflower-1 cup chopped asparagus (for the soup, I use the discarded end pieces that I save when I steam asparagus)-1 cup chopped peppers (yellow, red or green or a combo)-2 medium potatoes chopped-1 medium onion chopped-1 tbsp. garlic powder (you can use fresh garlic)-1 tbsp. curry powder-1 tsp. cayenne pepper
Directions
-bring 2 cartons of chicken broth to a boil
-chop all veggies in small pieces
-add veggies to chicken broth and boil until all are soft
-use a handheld processor to blend the soup or transfer to processor or blender and puree til smooth.
-return to pot and simmer
-add garlic, curry and cayenne pepper to taste.
-Enjoy!
