Orange Almond Wheat Bread

Ingredients
1 cup warm water4 Tbs honey2 tsp yeast1 1/4 cup white flour1 1/4 cup wheat flour1 tsp saltzest of 1 orange1 Tbs fresh orange juice1/2 cup almonds, sliced or chopped
Directions
Combine water honey and yeast in a large bowl or standing mixer. Let it sit for 5 minutes, until you can see the yeast bubbles.

While it is resting, sift your flour and salt together onto a plate. Measure 2 1/2 cups of the flour mixture into the bowl. Add the orange zest, orange juice, and almonds (finely chopped). Let the bread paddle stir until it forms a nice dough.

Flour your working surface with the rest of the flour mixture. Knead the dough into the flour until it is just tacky, but not sticking to the counter or your hands. Put it back in the bowl, cover with a towel and let double.

Transfer the dough into a bread pan. Preheat your oven to 350 degrees F. Cover and let double again. It doubles pretty fast if you put the loaf pan on top of your oven. Bake for 25 minutes, or until the crust is golden brown.
