Healthier Twice Baked Potatoes

Ingredients
6 Med. baking potatos, Yukon Gold1 cup lactaid, fat free milk2 slices of Turkey Pastrami1 dash of Pepper 1 dash of Paprika1 tsp. Basil (freshly chopped, if available)3 oz. organic Greek Yogurt1 tsp. per serving of I Can't Believe It's Butter, Fat Free4 oz. Kraft, 2% shredded Cheddar cheese
Directions
Wash and scrub potatoes under warm running water, scrubbing with a vegetable brush. Bake at 375oF for 45 minutes to 1 hour or until tender. Cool. Cut a thin slice off the top of each potato and discard. Scoop out the pulp, leaving the shell in tact. In a bowl mash the potatoes and then stir in milk, butter substitute, turkey bacon, 3 ounces of cheese, yogurt, chives, sea salt, pepper; Mix. Spoon into the potato shell.
Place on an un-greased baking sheet. Bake at 3750F, for 20-25 minutes, or until heated throughout potato. Sprinkle with remaining cheese. Bake just until melted approxiamately 1 minute. Garnish with paprika and basil.

    I made this recipe. Very delicious! I'm glad I tried it! Instead of turkey pastrami, I used turkey bacon. I'm impressed! Andthe best part is it feels sooo good to know it's healthier! - 12/31/11
