Quiche Muffins

Ingredients
2 c. White Flour2 tsp Baking Powder 1 tsp Salt1/2 tsp Black Pepper 3 large Eggs3/4 c. Skim Milk2 tbsp Canola Oil6 oz Dannon All Natural, Plain Nonfat Yogurt3/4 c. 2% Shredded Sharp Cheddar Cheese4 slices Bacon,cooked and chopped4 Green Onions, chopped
Directions
Microwave the bacon on high on a paper towel lined plate for 3 minutes to cook. Mix together flour, baking soda, salt and pepper in a medium bowl. In a separate bowl, mix eggs, milk, yogurt, and oil. Gently stir the wet into the dry mix. Fold in bacon, cheese, and chopped scallions. Scoop into a muffin tin and bake at 350° for 16-18 minutes. Makes 12.
