Low Sodium Spaghetti Sauce, from Scratch, ala Rita, Slow Cooker Style

Ingredients
6 cups fresh tomato, diced8 oz Carolina ground turkey8 oz 93% lean ground beef2 cup diced onion1-1/2 cup chopped green pepper1-1/2 cup diced zucchini2 c chopped yellow/crookneck squash16 oz fresh sliced mushrooms1-6 oz can Hunts No Salt Added tomato paste 2 cup burgundy wine1 Tbsp garlic powder1/2 Tbsp cracked black pepper (or to taste)1 Tbsp oregano1/2 Tbsp dried basil1 Tbsp dry Italian Seasoning
Directions
Brown meat. I like mine very fine, so I put them through the food processor after browning. Put meat in slow cooker. In pan with reserved drippings heat onion, bell pepper and garlic until just looses firmness. Add to slow cooker. Add tomato paste, stir. Cook on low 4 - 6 hours.
Stir, add burgundy wine. Cook on low additional 1-2 hours.
Makes about 3 quarts. Serving size about 2 cups.
Serve over hot noodles or rice.

*Can also be cooked for an hour in pan or in oven on 350* for about 2 hours. The longer it cookes, the more flavorful it will be. IF YOU COOK IN THE OVEN, stir and check heat. Spray whatever you cook this in with non-stick - including the lid ;)
I cooked it on low for 18 hours this last time and Mmm! SO GOOD!

    My hubby not only has to now have low sodium, but he also has gout problems. So little beef and no turkey. I think I will try this with chicken 3/4's and ground beef 1/4. He also can't have mushrooms, dang it. - 3/8/15

    This looks like it will be very tasty. I want to get it absolutely right. I didn't read in here when I put in the fresh tomato, squash, onion, zucchini, mushroom. oregano and dried basil. Sorry I'm new to cooking so none of this is intuitive. Can someone help please? - 8/13/08
