16 oz dry Pink Beans1 tsp baking soda7 cups waterbutter flavored non-stick spray1 Tbsp Extra Light Virgin Olive Oil2 cups white onion, chopped2 cups bell pepper, chopped1-1/2 Tbsp chopped garlic2 Tbsp chili powder4 tsp thyme2 cups fresh tomato, chopped14-1/2 ounce can College Inn Light & Fat Free (50% less sodium) Chicken Broth6 oz can Hunts Tomato Paste, No Salt Added
Soak beans in 6 cups water with 1 tsp baking soda (less *pft*) overnight. Drain and rinse well. Spray slow cooker with butter flavored pam. Put in beans in slow cooker.
Cook onions, garlic and peppers in olive oil until soft. Add to beans. Add remaining ingredients plus 1 cup water. Stir and cover. Cook on low for 6-8 hours.
Makes 16 - 1/2 cup servings.
