Brown Rice with Lentils and Quinoa

Ingredients
1/2 cup chopped onion1 clove chopped garlic1 tsp olive oil1/2 cup brown rice1/2 cup whole grain quinoa1/4 cup dry lentils, washed and picked through
Directions
Saute onions and garlic in olive oil until tender
add chicken broth, brown rice and lentils
bring to a boil
reduce heat to a simmer
cover and cook 15 min
after 15 min, add quinoa
simmer an additional 25 min
add water if necessary

    I used 2.25 cups broth and it turned out perfectly. I like to cook a similar batch once a week and add to meals throughout. I especially enjoy cooking an egg into it for an easy and quick breakfast. - 7/10/16

    Nice thought, but I don't see the quantity for Chicken Broth listed in the ingredients. I tried 2.5 cups (based on the directions on my bag of rice and bag of quinoa, including a bit for the lentils) and it was a sloppy mess. If trying, I'd start with 2 cups and go from there. Wash your quinoa. - 4/3/16
