Quinoa Salad with Garbanzo Beans and Kale

Ingredients
1/2 cup quinoa1 cup water1 (15-oz) can garbanzo beans, drained1 bunch kale, tough stem removed, rinsed, and chopped1 clove garlic, peeled and minced1 Tbsp fresh lemon juice, or more to taste1 tsp dried tarragon1 tsp dijon or whole-grain mustard1.5 Tbs olive oilsalt & pepper to taste
Directions
1. Bring the quinoa and water to a boil in a small saucepan over high heat. Reduce heat to medium-low, cover, and simmer until the quinoa is tender, and the water has been absorbed, about 15 to 20 minutes.

2. Steam kale in a covered saute pan until tender--adding water as needed, about 15 minutes

3. Scrape the cooked quinoa into a mixing bowl. Add the garbanzo beans, kale, garlic, lemon juice, tarragon, mustard, and olive oil. Stir until evenly mixed. Season to taste with salt and black pepper before serving.
