Ingredients
quinoa,raw peppers, onion, summer squash, fresh herbs, salt, lime or lemon juice, olive oil
Directions
Cook the quinoa (I use a rice cooker) using 2c water for 1c quinoa. Mix cooked quinoa with the chopped veggies, salt, oil and lime juice.
