Cranberry Walnut Pancakes

Dry:1.5 c. AP Flour2 Tbs. sugar.5 tsp salt1.5 tsp. baking powder1 oz walnuts, chopped1/3 c. dried cranberriesWet:1.5 c. skim milk2 lg. eggs1 tsp vanilla extract3 Tbs. canola or vegetable oil
Mix dry ingredients together in a medium to large mixing bowl. In a separate bowl, beat together wet ingredients. Add wet to dry and mix just enough to bring together. Cook 1/2 cups of batter in skillet on medium-low heat with just enough oil to lubricate. Flip when bubbles form and stay on wet side. Enjoy with molasses or honey.
