Nana's Slow-Cooker Chicken Tortilla Soup

Ingredients

1 large sweet onion - chopped2 large carrots - chopped into bit size pieces1 can stewed tomatoes1 can low sodium chicken broth1 package taco seasoning2 bay leaves1 tbsp. garlic powder (or to taste)1 tbsp. chili powder (or to taste)4 boneless/skinless chicken breasts 1 can yellow corn - drained
Spray your crock pot with non-stick spray.
Place all ingredients in the crock pot, putting the chicken on top and then pushing down a bit so that it's covered with other ingredients.
Cook on low for 5 hours, then take the chicken out, shred it, and return it to the crock pot.
Add the corn and cook for another hour or 2 until nice and thick.
Serve with corn tortilla chip strips poured on top of each bowl of soup. You could also add things like shredded cheese, black olives, sour cream, etc... Just whatever you like...
