Salmon Cakes

Ingredients
1 can red salmon, drained, spine and fat removed1/2 cup Panko bread crumbs1/2 cup finely chopped celery1/2 cup finely chopped green onion2 tbsp lemon juice3 egg whites1 1/2 tsp dijon mustard
Directions
Flake salmon
In separate bowl mix together egg whites, mustard and lemon juice then stir into salmon
add bread crumbs, celery and onion and mix well
Shape into 4 equal size patties
Chill for 1 hour
Spray non-stick pan over medium-high heat and brown both sides of patties
Serve hot
