Tommy's Black Bean Caserole

Ingredients
2 15 ounce cans black beans, drained and rinsed2 15 ounce cans sweet whole kernal corn, drained2 10 ounce cans crushed green chile peppers2 cups salsa6 corn tortillas1 lb. extra lean (95% fat free) ground beef or chuck1 cup fat free shredded cheddar cheeseSalt, pepper, and seasonings to taste.
Directions
Preheat oven to 350 degrees.
Line a 2 quart baking dish with tortillas.
Brown the ground beef, drain, and spread over tortillas.
Mix beans, corn, green chiles, and salsa in a bowl and pour over beef and tortillas.
Bake covered on center rack of oven for 30 minutes.
Spread cheese over the top of the mixture, and bake uncovered for 10 minutes or until the cheese is melted.
Remove from oven, allow to cool for 5 minutes and serve.

    i tried this after i had the side dish version (black bean bake) its really good! i still added some chile powder to add a lil spice, but it didnt really need it :) - 6/29/11
