Creamy Mashed Cauliflower

Ingredients
1 head cauliflower, chopped2 tablespoons waterdash of saltdash of pepper2 tablespoons unsalted butter2 tablespoons light cream cheese1/4 cup fat free sour cream1 clove garlic1/2 teaspoon kosher salt1 teaspoon black pepper1/4 cup cheddar cheese, shredded
Directions
1. Place cauliflower in microwave safe dish. Add water, dash of salt, and dash of pepper. Cover with plastic wrap. Microwave on high for 4-5 minutes, or until tender.

2. Carefully place cauliflower and rest of ingredients in food processor. Blend to desired consistency. Serve.
