Ladies Home Journal Dinner Frittata with Sweet Potato Fries

Ingredients
1 medium sweet potato3 tsp olive oil, divided1 whole egg3 egg whites1/2 cup chopped mushrooms2 tbsp reduced fat shredded cheese1 tbsp chopped basil
Directions
Cut sweet potato into fries. Toss with 1 tsp olive oil. Bake at 425 deg for 25 minutes.
Beat 1 whole egg with 3 egg whites and mix in mushrooms, cheese and basil. Pour into skillet coated with remaining 2 tsp olive oil. Cook without stirring for 2-4 minutes. Transfer skillet to oven and broil for 3 minutes. Serve with fries.
