Cat's Dessert Dumplings With Fruit

Ingredients
2 nectarines, peeled and sliced1 cup water1 Tlsp tapioca1/2 cup Splenda1/2 cup flour1/2 cup oat flour (ground old fashioned oats)1/4 cup Splenda2 tsp baking powder1/2 cup 2% (or less) milk
Directions
Dissolve tapioca in warm water while preparing the nectarines, which you will peel, remove the seed, and slice.

Put the tapioca, water, Splenda, and nectarines in a saucepan and bring to a boil. Lower heat, put a lid on the pan, and let simmer while you prepare the dumplings.

Whisk the flour, ground oats, Splenda, and baking powder together. Add the milk and stir until just combined.

Spoon the dumpling mixture over the simmering fruit. Replace the lid and let simmer for 20 minutes.

Do NOT lift the lid during the 20 minutes!!

Ladel out 1/4 of the fruit mixture with 1/4 of the dumplings per serving.

You can serve with no fat Cool Whip or no fat vanilla ice cream, etc, but these must be added separately to your food tracker.
