Coconut and Cashew Crusted Tilapia

Ingredients
1/4 cup chopped cashews1/4 cup unsweetened shredded coconut1/2 tsp cayenne pepperdash of salt and pepper 2 Tilapia fillets (apprx 3.5 oz)
Directions
Preheat oven 350 F

Mix together cashews, coconut, cayenne pepper, salt and pepper. Coat tilapia with cashew mixture.
Bake for 30 min. or until tilapia flakes easily

Serving Size: Makes 2 1-fillet servings
