Espresso Bean Coffee Crisp Bars

¼ cup cream cheese3 tbsp butter or margarine2/3 cup brown sugar1 tsp stevia½ cup soy milk ½ cup coffee1 egg2 tbsp instant coffee powder1 tsp vanilla1 cup flour1 cup spelt flour½ cup unsweetened cocoa powder2 tsp baking powder1 giant Coffee Crisp bar, chopped1/2 cup chocolate-covered espresso beans
Lightly coat the bottom only of a 9x13 pan with nonstick cooking spray.
Beat cream cheese, butter, sugar and stevia until fluffy.
Add milk, coffee, reconstituted egg, coffee powder and vanilla.
Add flours, cocoa powder, and baking powder, mixing until just combined.
Fold in candy pieces.
Bake 20-25 minutes.
Cool completely on a wire rack before cutting.
