Gluten Free, egg free, sugar free Banana Muffins

3 ripe bananas mashed1/3 C butter, melted (mix with bananas and set aside)1/2 tsp KAL stevia concentrate (slightly less than full spoon)2 TBSP Steviva Blend (erythritol and stevia)1/2 tsp Xanthan gum1/4 tsp salt2 TBSP flaxseed, ground1-1/2 c. Gluten Free All purpose flour1/3 c. chopped walnuts
Mash the bananas, add melted butter and set aside. Mix dry ingredients, leaving the walnuts to last. Mix both dry and wet together and put in muffin cups (I use silicone cups and they work very well, you don't have to 'grease' them) and bake 325 degrees Farenheit for 20 to 25 min until golden brown on top and toothpick comes out clean. Makes 1 doz. Most people will never know these are gluten and sugar free--unless you tell them!
