citrus Coconut Muffins

Ingredients
2 1/2 cups Self Raising flour1 Cup Caster Sugar90g butter2 tsp Lemon Zest2 Tsp Orange Zest1 Egg3/4 cup skim milk1/4 shredded coconut
Directions
Grease muffin pan. Pre heat oven to 180 Celcius. Combine flour and sugar and rub in butter. Add zest, egg and milk. Spoon into pan, sprinkle with coconut, press in gently. Bake for approx 25mins
