Whole Grain Oatmeal Buttermilk Pancakes

Ingredients
3/4 C large-flake oats2 C buttermilk1 C whole wheat flour1/4 C ground flaxseed1 tbsp sugar1 tsp cinnamon1 tsp baking soda3/4 tsp baking powder1/4 tsp salt1 egg1/4 C egg whites 2 tbsp oil1 tsp vanilla
Directions
Soak oats in buttermilk for 20 minutes. Mix together dry ingredients. Add remaining wet ingredients to oat/buttermilk mixture. Add dry ingredients to wet and stir. Use a 1/3 cup measure to scoop and spread pancakes. Delicious with fruit syrup.
