Ingredients
1 cup pearled barley2 cups tomatoes diced1 cup boiled beets diced1 green pepper chopped2 cup onion chopped1 cup canned mushrooms 2 cups carrots chopped2 cups celery chopped2 tsp garlic2 cups cabbage chopped2 cups cauliflower chopped2 cups broccoli chopped1 tsp black pepper.25 tsp salt10 cups water
Directions
makes at least 18 1-cup servings
precook and peal beets, cut into cubes
cutup all of the ingredients, add to water, boil till tender, remove half of the mixture and puree in blender, return to the pot and mix it up, extra water may be required for blending. Add salt and pepper to taste
