Squash Casserole

Ingredients
6 squash, yellow & green, diced (about 6 cups)1 large onion, diced (about 1 cup)2 carrots, diced (1 cup)2 tbsp olive oil1 cup 2% Mexican cheese blend, shredded1/2 cup reduced fat sour cream1/2 tsp black pepper1 tsp garlic1/4 cup bread crumbs (Pyrenees french bread)
Directions
Saute the onion, squash, and carrots in olive oil until they just begin to be tender. Drain. Add in sour cream, 2/3 cup cheese and seasonings, and mix together. Pour into a casserole dish. Sprinkle top with 1/3 cup bread crumbs and 1/3 cup cheese. Bake 350 for 25-30 minutes.
